I like Rice Pudding and I love low fat, and I used to have 1 or sometimes 2 pots of Muller Rice each and every day…delish…
But when I realised how much sugar there was in 1 pot of Muller Rice, low fat aside, 1 pot is nearly 200 calories.
So I came up with my own recipe for low fat and sugar free rice pudding that is perfect if you are on a Gluten Free Diet.
Prep and Cooking time 40 minutes:
1000 ml (1lt) either skimmed or 1% milk
100 grams pudding rice
1 and half heaped dessert spoons of your favourite sweetener (Mine works well with Hermasetas)
In a non stick saucepan, bring 1000ml (1LT) either skimmed or 1% milk to a gentle simmer.
Add the pudding rice and stir. (I use a teflon whisk and to prevent a skin forming on the milk, I stir every 4-5 minutes.) This needs to simmer for 25-30 minutes until the rice is soft)
In a seperate bowl lightly whisk the 2 eggs and sweetener together.
When the rice is soft, slowly add about 5 tablespoons of the milk mixture to the egg and sweetener mix, whisking all the time, then pour the egg and milk and sweetener mixture back into the pan, again whisking all the time.
note: the whisking doesn’t have to be vigorous, just to keep everything mixing thoroughly and to stop the egg separating.
Reduce the heat to a low simmer and let cook for a further 8 minutes, stirring at least every 2 minutes until this lovely low fat and sugar free rice pudding thickens.
Ideal to serve immediately with a topping of Jam, raspberries or anything else you fancy, often I put it in little airtight plastic containers in the fridge and have them over a few days.
